Kinder Kitchen cooking tip - everything goes with pasta


Vegetable pasta sauce

Ingredients:

1/2 small butternut squash

1 leek

1 small sweet potato

1 small head of brocilli

1/2 onion

1 tbsp oil

1 tbsp butter

To cook:

1. In a large suacepan fry the sliced onion and sliced leeks in a little oil and butter for a couple of minutes.

2. Then add all the other vegetables (which have been washed and chopped up) into the pan.

3. Pour in enough water so that half the vegetables are covered. Place a lid on the pan and simmer for 30-40 minutes until all the vegetables are soft.

To serve:

Puree with a hand blender and add to freshly cooked pasta.

You can of course add any vegetables you have in your fridge but by adding ones that are sweet will make it much tastier for your little one.

I love this soup and eat it with a large slice of fresh bread.
