Ingredients:
• One orange
• olive oil, for brushing and drizzling
• melted butter, for brushing
• 4 grey (striped) mullet fillets
• 200ml white wine
• 2 tablespoons coarsely chopped fresh herbs, such as thyme, marjoram and flat-leaf parsley
• salt and pepper
Alternative fish: red mullet or sea bream
Cooking:
Preheat the oven to 180°C/350°F/ Gas Mark 4. Cut the peel and white pith off the oranges, then cut into thin slices.
Brush a large ovenproof dish with a little oil and butter.
Put the fish in the prepared dish, season with salt and pepper, drizzle with olive oil and sprinkle with the white wine.
Cover with the orange slices, sprinkle with the herbs and bake for 20 minutes. Serve immediately in the dish.
